Houseboat Holiday Goulash

One of the simple yet amazing spring or fall houseboat cooking recipes made from just a few simple ingredients:

6 medium sized onions

3 cloves garlic

2 1/2 lb of stewing beef, cubed to bite-size portions

5 tablespoons Sweet paprika

1/4 cup vegetable oil

1 tspn dried marjoram

1 tspn dried thyme

1 tspn caraway seeds (don’t sweat it if you don’t have this)

Red wine vinegar (you brought wine, right?)

Water  8-10 tablespoons (how convenient..you’re on one of if not the cleanest river in the world)

Salt and pepper (don’t leave home/shore without them)

Peel and dice the garlic and onions (can be done at home and brought in ziplock bag)

In a big pot, heat vegetable oil on medium/high heat

Add onions and sauté until translucent (not browned)

Take 3 tablespoons of paprika, the other spices and add. Then in goes the wine and water.

Stir all up and then in goes the meat. Don’t stir. Let it get a little colour but not like it was pan-fried.

Add salt and pepper and turn the heat down low and cover.

Let it simmer but not boil and stir occasionally.

let it cook for a couple of hours, maybe longer…until the meat is tender. (The boat will smell fantastic as this simmers away).

After it seems ready, add in the remaining paprika, add water if needed and let simmer for about 15 minutes.
